SERRA DA ESTRELA PDO COTTAGE CHEESE DESERT – CHEF DIOGO ROCHA, MESA DE LEMOS

Serra da Estrela PDO Cottage Cheese Desert:
Recipe by Chef Diogo Rocha, Restaurante Mesa de Lemos in Viseu

Ingredients:
Sponge cake
300 grs sugar
180 grs flour
6 Eggs
6 Yolks

Cheese jam
5 Yolks
icing sugar as needed

50ml bitter almond liqueur

200g Serra da estrela PDO Cheese

Linden tea
Cocoa powder 

 

How to do it:

 

Preheat the oven to 180°

Start by making the sponge cake. Beat the eggs and yolks with the sugar for about 10 minutes.

Add the sprinkled flour and mix with a spatula.

Line a cake pan with sheets of paper.

Pour the mixture into the cake pan and bake for 15 to 20 minutes, until well cooked.

Remove from the oven and set aside.

For the jam, beat the Serra da Estrela PDO Cottage Cheese with the yolks and sugar until you get a consistent cream. Then fold in the bitter almond.

Make an infusion with linden tea.

Cut a portion of the sponge cake, moisten it in the infusion and place it in the bowl.

Add the cheese jam and finally sprinkle with cocoa powder.
