SERRA DA ESTRELA MATURE PDO CHEESE PUDING

Serra da Estrela Mature PDO Cheese Pudding, a recipe of the book “A Queijaria do Chef” by Chef Diogo Rocha, from  Restaurante Mesa de Lemos, in Viseu.

The restaurant was distinguished this year with a Michelin star and reopens on the 5th of June, where you can taste this and other gastronomic delights.

Ingredients:
250 ml cream
250 g Serra da Estrela Mature PDO Cheese
500 g sugar
125 ml water
18 egg yolks
Toffee

How to do:
Start by dissolving the cheese with the cream in a bain-marie.

In a saucepan, combine the sugar with the water and heat until it reaches 107ºC.

Pour this syrup, carefully, into the yolks, previously separated and beaten, slowly and always stirring.

Add the cheese and cream mixture to the yolks.

Pour the mixture into greased caramel molds.

Bake in a bain-marie at 160ºC, covered with aluminum foil, for 30 minutes.

After this time remove the aluminum and let it cook for another 15 minutes.

Remove from oven and let cool.
