This pure flavor, a noble product resulting from the sheep-farming of Serra da Estrela, the master cheese maker who produces by hand, the shepherd and his selflessness in the rocky massifs of this huge mountain, the Serra da Estrela sheep that produces pure milk and the pastures that accompany it permanently this millennial product.

This is Serra da Estrela PDO Cheese, produced only with milk from Serra da Estrela sheep, fed exclusively on pastures in the demarcated region of Serra da Estrela. To this unique milk is added the thistle flower and salt, so that it curdles.

The curd is then drained and turned into cheese by the hands of the cheesemakers who, in each gesture, preserve an ancestral wisdom.
