GAME SAUSAGE AND SERRA DA ESTRELA CHEESE STRUDEL ON TOP OF WILD MUSHROOMS

Game Sausage and Serra da Estrela Cheese Strudell on top of wild mushrooms

Recipe by Chef Cristina Almeida, from Montebelo Vista Alegre Ílhavo Hotel.

Ingredients:
0.50 Game sausage
100 gr spinach
50 gr cheese
100 gr onion
50 gr Shiitake mushrooms
1 leaf filo pastry
Olive oil
Garlic

Execution:
First, blanch the spinach. Then sauté them in olive oil and garlic. Season with salt.

Cut the onion into half-moons and sauté them with the mushrooms in olive oil and garlic. Season with salt.

Mash the game sausage, wrap the spinach and in the middle add the cheese, rolling it like croquettes.

Open the filo pastry and wrap the game sausage with it.

Bake at 180º and place over the onion and mushroom mixture.
