Pedro Couceiro: The importance of Queijo Serra da Estrela

Pedro Couceiro regards Queijo Serra da Estrela/PDO as a unique landmark in the Portuguese gastronomy and it is only fair to consider it as one of the 7 Wonders of the Portuguese Gastronomy.

Pedro Couceiro da Costa, a veterinarian and a member of Confraria (brotherhood) do Queijo Serra da Estrela, has given his testimony for Vale da Estrela regarding Queijo Serra da Estrela:
“Lecturing about the importance of Queijo Serra da Estrela is a task that requires going back to the Pre-historic ages and returning back to the present days, where we will find the answer to the fact that this Cheese has been a part of such long period of time.

It is a Cheese, whose features make of it, and always have, a highly biologic and natural product. Its manufacturing requires milk of Serra da Estrela’s Sheep and/ or Churra Mondegueira, cardoon and salt, which makes this cheese semi-soft, medium-buttery, with few holes or none, in such a way it can be cut into slices. All these features meet the palate of the most demanding Consumer, throughout centuries, whether it is a Portuguese, a European, an American or an Asian.

These are the very features of our Queijo Serra da Estrela /PDO that have made it a unique landmark of the Portuguese Gastronomy and specifically the highest expression of Serra da Estrela’s Gastronomy. For some reason, the Portuguese have elected it as one of the 7 Wonders of the Portuguese Gastronomy.
